Starting to learn about canning and food preservation. Anyone already do this and con provide good starting tips?

I’ve recently gotten interested in the canning Ables and potentially meat for long-term storage. I’ve tried to pick a few websites to learn, but it sounds like you can easily get bad information or get yourself really sick. Does anybody have a good resource especially around storing meat, long-term like chicken That they would be willing to share. Also, what are some of the favorite things you like to store?
