Not mine but I enjoy it on a regular basis!
Recipe for Potato, Sausage, Bacon, Kale and Onion Soup. 🔥🔥🔥🍜🍜😋

Not to difficult and takes about an hour to make.
Ingredients:
10 cups water
4 Large potatoes
1 lb. of sausage (I like to use hot Italian style for kick!)
1 lb. hickory smoked bacon
1 Large onion
1/4 bushel of kale
1 pint heavy whipping cream
2 oz. minced garlic
10 small cubes of chicken bullion (1 per oz. of water used. Add more if needed)
Preparations:
Peel and cubing the 4 potatoes and set aside.
Wash and chop the Kale and set in refrigerator (should end up with 2-3 large handfuls).
Chop 1 large onion and set aside.
Slice thin 1 lbs. of bacon.
Cooking:
Start by filling a large soup pot with 8 cups. Heat 2 cups water and dissolve 10-15 (depending on taste!) small bullion cubes.

Brown 1lb. sausage in large frying pan and set aside. (remove any oil)

In the same pan, cook 1lb. of bacon to about 90% done. Important to remove MOST or ALL of the oil from the cooked bacon! Next add the chopped large onion and the 2oz. minced garlic. Cook until the bacon is done and the onions are cooked.

In the soup pot, add the 2 cups bullion mix (10 cups total liquid in pot), potatoes, and the cooked bacon, onions, and garlic. Bring to boil for 10-15 minutes or until the potatoes are cooked. Should be able to pierce with a fork easily.
Combine all ingredients.
To soup pot add 8-16 oz. heavy whipping cream (start with 8 and add for sweetness), cooked sausage, and kale.

Enjoy! 😋
