In ye olde days, one could just deactivate or break the button that came out of the A-Pillar, especially on GMs (they were never clever about hiding the button or making one that worked for very long). I suspect in our modern era, though, that you'd have to pull the door panel and cut a wire somewhere. Metalmann is right-try your luck with the google. Surely there's a forum for GM truck owners and surely someone has done it already (or would have service literature anyway).

dont know about GM but for my ford truck it was a combo of rotating the key and clicking the seat belt in a certain order to turn off the seat belt alarm and light and the door chime
