I'd definitely recommend the BabyPants trainers - they're soft, comfortable, absorbent, and come in a range of prints (as well as old standbys pink, blue, and white). You can get them either from the company website or eBay.

They also sell on eBay, if that's an option.

Maybe that's why the majority of my sleepers have either a zipper or buttons holding up the seat - I imagine buttons could be retrofitted to yours.

The Almost A Big Kid pants would be able to withstand a moderate wetting, though I suspect they would be fairly soggy afterward. If you're expecting that you would need diaper-level absorbency, I'd opt for My First Training Pants.

With or without plastic pants?

Under normal clothing, the Almost A Big Kid pants are not noticeable unless you're looking for them. The My First Training Pants, being more bulky, do show a noticeable bulge in the seat - though loose jeans could camouflage that.
